Indianized Bulgur Salad

VIDEO: This Indianized Bulgur Salad is another eat cheap recipe that you can make ahead and enjoy all week long! I love the chewy and nutty texture of bulgur, don’t you? And, the fact that bulgur is full of protein makes it a great alternative to traditional rice. I especially like how simple it is to assemble this dish. Bulgur comes parboiled so while it’s steeping you can get everything else ready for a lickity split meal.


1 cup uncooked bulgur wheat
1/2 tsp cumin seed
2 cups boiling broth
1/2 cup diced red pepper
1/4 cup chopped green onion
1/4 cup dried cranberries
1/4 cup crumbled feta cheese


1/4 cup light olive oil
2 Tbsp fresh lemon juice
1/2 tsp garam masala
1/2 tsp salt

In a large mixing bowl, combine bulgur and cumin seed. Pour boiling broth over top bulgar and cumin. Cover and let steam/steep for 30 minutes. Drain and reserve excess liquid. Mix in vegetable, onion, cranberries and feta.

In separate bowl combine ingredients for dressing. Oil, lemon juice, salt and garam masala. Add reserved broth (optional). Pour dressing over bulgur salad and toss well.

    This looks tasty! The only way I’ve had bulgur is in tabbouleh. Looking forward to trying out this recipe.
